Gazpacho (guhz·paa·chow) is a cold Spanish tomato-based raw vegetable soup, originating in southern Spain. Gazpacho is popular with farmers as a way to cool off during the summer and to use available ingredients such as fresh vegetables and stale bread, so it has never gone out of style (or out of the farmers' bellies!). It is also one of my all-time favorite things to eat!
Our Sticky Fingers Cooking gazpacho recipe calls for lots of fresh vegetables, a hit of olive oil and vinegar, that is puréed until silky and smooth. No chunky gazpacho here, which makes it much more palatable for kids. We top our soup with a delicious crunch sweet corn relish and kid-made flatbreads with extra cheese for dipping into our soup. For dessert, a summertime treat of grape granita (think: a refreshing healthy icee) to cap off a beautiful and vibrant summer meal.
