Marvelously Mediterranean Cheesy Stuffed Mushroom Parcels + Frothy Mint Lemonade

One of our absolute favorite ingredients to write into recipes for our Sticky Fingers Cooking classes is puff pastry. If we could get away with it every week, we would. Can you think of anything that wouldn’t be delicious encased in buttery, flaky, golden-brown goodness?

Despite the fact that many kids and adults alike say they are not fans of mushrooms, we love to feature these, too, because the switch from “loathe” to “love” is so wonderfully satisfying.
Mushrooms are fascinating and touted as a superfood with so much research coming out citing their health benefits. They are the meat of the vegetarian world - perfect for a Sticky Fingers Cooking recipe. And what better way to facilitate the switch from “loath to love” than to pair mushrooms with yummy, gooey cheddar cheese and puff pastry?! In fact, this could be a great way to coax any vegetable into your kids’ dinners. These would be so good with cauliflower, broccoli, bell pepper, zucchini, etc, or a medley of vegetables, and they make the perfect after-school snack or appetizer to bring to a party, especially as the weather gets colder.
