RECIPE: Late Summer Tomato Panzanella Salad + Best Basil Emulsion + Basil Berry Lemonade
Equipment Checklist:
- Cutting board
- Knife (butter knife or chefs knife depending on your child's ability)
- Colander
- Large & Medium Mixing Bowls
- Measuring Spoons
- Medium Skillet
- Whisk
- Blender (free standing or an immersion blender)
- Citrus juicer (optional)
Ingredients:
- 2 cups cherry tomatoes (about 1 pint)
- 2 garlic cloves
- 4 lemons
- 3 sprigs of fresh basil leaves
- Fresh Mozzarella Cheese (Optional and if no dairy allergies are present in class)
- 1⁄4 Cup of fresh or frozen raspberries (optional)
- Ice: About 2-3 Cups
- 3 cups chopped crusty baguette bread (1⁄2 large baguette)
- 1/4 cup + 2 tablespoons of olive oil
- 2 teaspoons of Salt
- Pinch of pepper
- 2 tablespoons red wine vinegar
- 1⁄2 C to 1 C of sugar, agave or honey
