What's in Season? Roasted Vegetables

We’re told that kids should eat about 3-5 servings of vegetables every day. But there’s only so many carrot sticks a kid will eat, even with dip, amirite?

So, how are we going to get kids excited about all those vegetables? Roasting! Roasting brings out the natural sweetness in vegetables, and kids – and adults – love them. Kids can participate by choosing the vegetables, cutting them up, and tossing them in oil. Below are approximate roasting times.

Winter Vegetable Roasting Times (based on approx. 1-inch chunks)

Tips for Roasting Vegetables
  • Use a metal pan with a rim (not too high a rim – high rims trap steam!).
  • Pre-heat oven + pan to at least 400°F. 
  • Choose veggies with similar cooking times (see chart at right).
  • Cut everything into uniform sizes.
  • Oil generously! Use enough oil to make each vegetable shine.
  • Season generously with salt. 
  • Don’t crowd your veggies!
Bump Up the Flavor

Take your veggies to other flavor dimensions with one of these moves:  ​​​​​​​

  • Season the vegetables before or after roasting. (Curry powder, garlic powder, taco seasoning, or dried or fresh herbs are all great additions).
  • Sprinkle in a little shredded Parmesan cheese during the last few minutes of roasting.
  • Toss roasted veggies with fresh lemon juice, vinaigrette, or pesto.

​​​​​​​Leftovers keep (in your fridge) for several days… but I’ll bet you there won’t be any!
