Crisp Mezzelune Strawberry Ravioli + Whipped Sweet Ricotta + Strawberry 'Sgroppino' Milkshakes

HERE COMES SUMMER! Dinner meets dessert at Sticky Fingers Cooking in these sweet ravioli pockets filled with fresh strawberries, lemon, and ricotta. I have 1 vocabulary word for our students this week:

This is just what we will do this week with the flavors of spring and ALMOST summer: super tart lemon + naturally sweet strawberries that come together with the combination of sugar and time… The longer the fruit macerates, or sits the better. If making homemade ravioli, with your kids, sounds like a lot of work. It is. However, It can be a snap, if you use our (very un-Italian) trick of swapping out wonton wrappers for homemade pasta dough. You and your kids can make these in half-moon shapes. You can also make them in a square or triangle shape.

Did you know?: Strawberries are low fat, low calorie; high in vitamin C (keeps you from getting sick), fiber (good for your digestion of foods), folic acid (helps the body to break down and convert the food that we eat into energy), potassium (helps your heart and your body when you exercise)– Eating strawberries, which are also rich in nitrate, can increase the flow of blood & oxygen to the muscles by 7%.  This prevents muscle fatigue, making exercise easier - All good things for growing kids!

We added ricotta cheese to every part of this recipe – Even the 'Sgroppino' Milkshakes! The ricotta thickens the milkshake and makes your drink extra creamy (rather than soupy). Plus, it packs a hefty dose of protein to keep your kids full a little longer. Ricotta is completely undetectable when blended in with other ingredients; so if you’re wary of tasting or feeling the clumpy cheese in your drink, fear not. The results are mind-blowing. Try it.
