Happy Valentines Day! We like to say that cake is always a good idea, and especially on Valentine’s Day. The word “cake” itself evokes joy and excitement, doesn’t it?!
The history behind this week’s inspiration: Mahogany Cake! Mahogany Cake is apparently the FIRST chocolate cake on record in the United States. For real. Traditionally, strong black coffee is added to the cake batter, and after it’s baked, the color takes on the reddish-brown tint of mahogany, which is due to the reaction of baking soda, vinegar, and the compound called anthocyanins that is found in both cocoa & cherries. It’s been said that Red Velvet Cake is a derivative of Mahogany Cake.
Cakes back in colonial times weren’t very sweet - sugar wasn’t as available as it is now, and it wasn’t as cheap, either. Chocolate tasted more like the cacao beans from which it came - today’s milk chocolate would be unrecognizable to our ancestors.
Our Sticky Fingers Cooking version of Mini Mahogany Cakes do not use coffee and are sweetened with cinnamon applesauce and just a bit of sugar. The cherry chocolate drizzle on top is DIVINE. The Iced Cherry Vanilla Spritzers brings all the favors together PERFECTLY. But we believe the best Valentine's gift would be to prepare and enjoy these recipes with the ones you love the most.
Speaking of VALENTINE’S DAY, did you know that it goes back even further than Mahogany Cake!? The first Valentine’s Day was celebrated way back in the 1400s.
